There's nothing more comforting than soup to warm you up on those cold winter nights. For dinner yesterday, I made a butternut squash soup. I've been meaning to try this for a while and I finally got around to it. I looked up a couple of recipes online and picked some items from different recipes that I thought would work best for my taste and came up with this...
Butternut Squash Soup
First, I boiled the butternut squash, because the skin is like rubber, lol. While that was on the cooker, I peeled the sweet potato, cut it up and boiled it as well. Also cut up the carrots and celery and throw them in separate pots to boil a little. While that was happening, I put some chicken in a pan to cook, to collect the broth for the soup.
It didn't take very long to boil the sweet potato, carrots and celery separately. But you know one those blenders that cooks the soup also? Well after this process, that has now made my wishlist, lol. Coz it certainly would've made the process a little simpler.
Once I cut stick a knife through the butternut squash, I took it out of the pot, peeled the skin off and cut it into cubes. I then blended it along with the sweet potato, carrots, celery, onion, shallots and chicken broth. I then heated a little olive oil in a pot with some garlic, butter and added the mix to cook for a little bit and seasoned to taste. Et voila!
